Healing leaky gut: day 18

I know I'm getting bored and monotonous with my breakfasts, but for the past year I've been drinking smoothies every morning and it's hard to let go of the good habit. I feel like it's good for me and I think it's delicious! The difference now is that I don't use dairy, coconut or soy products in my smoothies. Cold tea works just fine as a substitute!

My hip hurt when I woke up, but it slowly got better during the day. It's been an active day, so the slow cooker was perfect. Took an hour for lunch and took the opportunity to prepare dinner then, so it was just a matter of setting the table when it was time to eat in the evening. Very convenient!

Freshly squeezed grapefruit and orange juice

Lunch

Vegetable soup with smoked turkey

Ingredients

1 frozen mango

1 fresh mango

Instructions

Allow the frozen mango to thaw slightly, then blend everything in a blender. If it doesn't get the right consistency, put it in the freezer for about 1 hour. Enjoy!

Yum! Simple and so delicious! My youngest daughter wanted more!!


Dinner

Hearty meat stew

Ingredients

800 stewing steak

3 slices of bacon

2 leeks

1 gold beet

6 carrots

3 celery stalks

2 zucchini

10 cloves of garlic

10 black olives

1 lime

1 dl fresh coriander

0.5 dl fresh thyme

2 teaspoons sea salt

1 teaspoon turmeric

2 tsp ginger

5 dl broth

0.5 dl olive oil

Instructions

Fry the bacon hard. Place the stew pieces and bacon in the slow cooker. Peel, chop and cut the vegetables into pieces, add to the slow cooker. Squeeze over the garlic. Add the olives, spices and fresh herbs, as well as the broth and olive oil. Grate over the zest of one lime.

Put the slow cooker on low heat for 8 hours. Enjoy!
