Now things are starting to happen. I woke up at 5 am after 7.5 hours of sleep and was alert. For the second day in a row! I'm getting back into balance. No one else told me I had to do this project, it's something I felt I wanted and needed to do. I did a similar project a few years ago and the result was that I felt like a princess afterwards. That's the target image I have when the sweet tooth or coffee craving sets in. I want to feel like that princess again. Because that princess can't be stopped when she sets new goals!
Breakfast
Musselsoup
Ingredients
3 slices of bacon
1 onion
2 carrots
2 dl mussel juice
3 dl chicken broth
¼ head of cauliflower
400 gr mussels in a tin with liquid
Chopped leek or parsley as garnish
Salt and pepper to taste
Instructions
Fry the bacon until crispy and set aside. Cut onions and carrots into smaller pieces, fry for about 5 minutes.
Pour in the stock and mussel juice and add the cauliflower. Cook for about 10 minutes. Put everything in a blender, blend to a smooth soup. Pour everything back into the pot and add the mussels with the liquid. Bring to the boil. Eat with bacon bits. Enjoy!
It was good to have hot soup for breakfast and even though I don't like mussels very much, the soup tasted good. I wasn't very full though, so I had to eat a big snack today.

Salad of artichoke and cauliflower
Ingredients
⅓ head of cauliflower
4 pickled artichokes
3 tbsp olive oil
1 tbsp lemon juice
1 clove of garlic
½ tsp dried herbs
Salt and pepper
Instructions
Cut the cauliflower into small pieces and cook for about 8 minutes. It should be chewy. Meanwhile, make the dressing but olive oil, lemon juice, garlic, herbs, salt and pepper.
Rinse the cauliflower under cold water. Mix with the artichokes and the dressing. Leave to stand for a while or enjoy straight away. Enjoy!
This was a very beige dish (the whole day turned out to be quite beige, see pictures...), but the taste was not bad. Fresh herbs or baby spinach could do wonders for how it looked on the plate. Because yes, it does matter how the food we eat looks. I ate my salad with Lemon salmon. Very good!
Dinner
Orange chicken with citrus cauliflower
Ingredients
800 gr chicken breast filet
2 oranges
Olive oil
Fresh oregano and sage
Ginger and black pepper
Salt
Instructions
Marinate the chicken in orange juice (put the oranges on the chicken after squeezing out the juice), fresh herbs, ginger and pepper for about 2 hours in an ovenproof tray. Put the chicken in the oven at 220 degrees for 30 minutes or until the chicken is done. Enjoy!
Next time I will marinate in a plastic bag and for much longer, e.g. overnight. It was an ok meal, but I ate it with cauliflower salad with bacon and now I've really had enough of cauliflower. There must be more variety in the future!

Blueberry Smoothie
Ingredients
2 dl frozen blueberries
1/2 apple
1/2 banana
1/2 avocado
1.5 dl cold tea of any flavor
