I'm halfway through the tough part of this project! It actually feels wonderful! I crave coffee and chocolate and now it won't be long before I get to introduce this into my diet again. I'm really looking forward to it! Today there has been some really good food on the menu. If every day looks like this, I have no problem whatsoever in continuing to eat this way. The food is both beautiful to look at, tastes amazing and is healthy! And on top of that, I feel great:-)

Banana porridge with fried apples, raspberries and kiwi
Ingredients
1 banana
1 apple
10 raspberries
1 kiwi
1 pinch of sea salt
1 tsp cinnamon
1 teaspoon cardamom
2 tbsp butter
1 tsp honey
Instructions
Cut the apple into small pieces, fry in the butter for about 10 minutes, add the cardamom and honey. Mix well.
Peel and cut the kiwi into small pieces.
Peel and mash the banana in a large deep bowl, add the sea salt and cinnamon.
Mix the apple into the banana puree. Top with raspberries and kiwi. Enjoy!

Pad Thai with chicken
Ingredients
800 gr chicken breast filet
5 tbsp olive oil
8 cloves of garlic
6 tbsp fish sauce
6 tbsp juice from lime
1 tbsp apple cider vinegar
8 tbsp fresh coriander
6 spring onions or 1 leek
1 broccoli
3 carrots
Instructions
Cut the chicken into small pieces and chop the garlic.
Fry the garlic in the oil for about 1 minute, then add the chicken. Fry until the chicken is colored, about 5 minutes. Add the fish sauce, lime and apple cider vinegar. Cook for about 5 minutes. Chop the onions into small pieces, cut the carrots into thin sticks and the broccoli into small florets. Add the vegetables and cook for about 10 minutes. Add the coriander towards the end. Enjoy!
Yum, it was delicious! Everyone ate and wanted more. Good thing David wasn't home, or there wouldn't have been food left over for tomorrow's lunch boxes:-)
